Unfortunately, blueberry pie isn't all that portable, and sometimes, we simply don't have enough time to sit down and challenge ourselves to an epic one-man, pie-eating contest.

Plus, there's no faster way to make everyone hate you than by shamelessly taking your sloppy slice of pie into a packed subway car at rush hour, trust me.
But before you give up and settle for a sh*tty blueberry granola bar substitute, you should know someone just gave your precious pie a la mode a mobile makeover.
That's right. The clever foodies behind the blog, Honestly Yum, just answered all of your pie-filled prayers by turning your beloved sedentary snack into a portable Blueberry Pie Ice Cream Sandwich you can devour sans silverware.
If you're looking to live the American Dream with a couple of these bad boys, you'll be glad to know you can whip them up at home, since Honestly Yum was sweet enough to share its awesome recipe.

Honestly Yum just made all of our sweet dreams come true by creating some insane Blueberry Pie Ice Cream Sandwiches.
To make these bad boys, you'll need flour, sugar, salt, butter, blueberries, lemon juice, lemon zest, corn starch, eggs and vanilla.
First, combine the flour, sugar and salt in a food processor. Pulse in the cubes of butter, and then, slowly add ice water in the feeder, until the dough sticks together. Then, divide the dough, wrap each half in plastic and chill the halves in the refrigerator.
Next, combine the blueberries, lemon juice, zest and corn starch in a bowl and set the bowl aside. Once the dough is ready, roll each half out onto a floured surface, and cut out 20 rounds.
Place 10 rounds onto a baking sheet, and add a few blueberries to each one. Place the remaining dough rounds over the blueberries, seal the edges together and brush each cookie with egg wash.
Then, pop these bad boys in the oven and bake them at 350 degrees Fahrenheit until they reach golden perfection.
Once your pie cookies are cool, simply grab a spoon...
Load each one up with a scoop of vanilla ice cream...
